Wood ear mushroom salad

Wood ear mushrooms are very mild in taste and they have a unique crunchy and jelly-like texture. Their irregular shape enables them to catch the seasoning very well. 

Dried Wood ear mushrooms are fairly easy to find and can be bought in most health stores and Asian markets. 

To use them, simply soak them in water for about 2 hours until they expand and become brownish, plump and slightly transparent. 

After soaking, wash them to remove any dirt hidden around the folds. If they contain any tough stems be sure to cut them off. 

After rehdration, boil them in hot water in order to use them in a meal.


  • 25 grams of dried mushrooms
  • 1 fresh red chili pepper, sliced
  • ½ half onion, sliced

Salad dressing:

  • 3 table spoons of vegetable oil
  • 2 cloves of garlic, minced
  • ½ teaspoon of chilli flakes
  • 1 pinch sugar
  • 1 pinch ground Sichuan pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • sesame seeds, optional
  • coriander, optional


  1. Boil the mushrooms in hot water for 3 minutes. After straining, run them under cold water so they keep their specific texture and don’t soften too much
  2. In a small bowl, mix all of the ingredients for the dressing except the oil
  3. Heat the oil in a pan until it becomes hot. Pour it over the dressing ingredients and mix well
  4. Put mushrooms, chili pepper and onion in a bowl and pour salad dressing over it. Mix well and decorate optionally with sesame seeds and chopped coriander leaves.
