Shiitake cream soup

Shiitake cream soup is a rich and delicious one pot mushroom soup is a hearty meal which takes only 25 minutes to make.



  • 200g Shiitake mushrooms
  • 100g Champignons
  • 20g Butter
  • salt, white pepper, 1 bay leaf
  • 20g flour
  • 200g cooking cream
  • 2-3 ts vegetable broth powder
  • chives


First clean the mushrooms, either with a soft brush or a cloth to remove dirt. Cut champignons in slices and Shiitake in quarters. 

Roast the mushrooms in butter around 5-8 minutes and add some salt and pepper. 

Sprinkle with flour and roast it altogether for another minute. 

Mix cooking cream with 600 ml of water and add that to the mushrooms together with bay leaf and vegetable stock. 

Let the soup cook for 10 minutes on low heat then add salt and pepper if needed. 

Cut up chives and add them to the soup. 

The soup can be enjoyed with croutons or toasted bread.
